A Day at the Olive Oil Press in Kfifane
9th November 2006: Another busy day in Kfifane...

All day long, small trucks are visiting the press...

They are loaded with freshly harvested olives...

The produce of the olive growers is unloaded...

Crates of olives are stored in a neat order...

They wait in line for their turn...

Soon the crates are emptied in
the container where it all starts...

They can now start their journey
through the machines...

In a first step, they are washed thouroughly...

And here, they are sorted before entering the tubes
where they are actually 'pressed'...

Few minutes later, their 'essence', a fresh nicely smelling
oil shows up from the tabs at the other end...

Now the oil is collected in stainless steel containers...

Soon the farmers will fill their trucks again,
but this time with gallons of fresh olive oil...
